Hot dogs roasting on sticks are a favorite camper’s staple, but sooner or later you’ll want a new take on campfire cooking. This RV travel guide offers a delicious new recipe for each meal!
Breakfast: Apple Cinnamon Flap Jacks
Tools
- One fork
- One bowl
- One skillet
- Measuring spoons
Ingredients
- 1 cup flour
- 1 egg
- 2 Tbsp. each of sugar and cinnamon
- ½ tsp. each of salt and baking powder
- ½ cup each of water and apple sauce
- ¼ tsp. baking soda
- Butter for skillet
Directions
Mix all ingredients in a bowl with a fork until flour lumps are gone. It should be the consistency of thin yogurt. Melt enough butter to coat skillet and pour ¼ of the batter (for 4 large flap jacks) in the center of the skillet. Pour less batter for more but smaller flap jacks. Hold skillet above the fire or rest on a grill grate above the fire. When the edges are solid and there are bubbles in the center, flip the flap jack over in the skillet. Aim for both sides to be a golden brown. Repeat until the end of the batter and then eat them drizzled with honey! Serves two.
Lunch: Easy-Serve Chicken Fajitas
Tools
- Skillet
- Spoon
- Knife and cutting surface for dicing meat and veggies
Ingredients
- Diced chicken
- Diced Onion
- Diced peppers (we suggest red and green)
- Salsa
- Diced or shredded cheese
- Non-stick spray or oil
- Soft tortillas
Directions
Coat your skillet with non-stick spray or oil. Saute all your veggies and chicken until cooked through and they have dark “grill” marks from the skillet. Add enough salsa for taste but cook away any extra liquid. Top with cheese last, letting it melt down over the meat and veggies. Slap some into soft tortillas for a protein-packed and portable lunch!
Dinner: Coal-Roasted Beef and Veggies
Tools
- Tin Foil
- Knife and cutting surface for cubing veggies
- Non-stick spray
- Large stick or utensil
Ingredients
- 2 Ground beef patties
- 2 Potatoes, cubed
- 1 large onion, cubed
- 2 handfuls of baby carrots, each cut in half
- ¼ tsp each of salt, pepper, and garlic per patty
Directions
Wait until your fire has died down and what you have left is smoldering coals. Place one large sheet of tin foil on a flat surface and generously spray it with non-stick spray. Place one beef patty in the center, cover with half of the veggies, and sprinkle on the seasonings. Fold the tin foil securely around the food. Cover with another sheet of tin foil and fold it securely in the opposite direction. You want the package to be liquid-tight so none of the juices escape. Repeat with the other meat and veggies so you have two tight food packs. Using a large stick or utensil, dig some coals aside and drop the packs in the hole. Cover the packs with coals again and let cook for 10-15 minutes. Carefully dig them out again with your utensil, unwrap them (be mindful of the heat and steam!) and check the meat to make sure it’s thoroughly cooked. Return to fire if it needs more time, otherwise enjoy! Serves two.
